that is, the max number of jack ports (i.e. channels) the jack server will allow.

Default is 256, but it can be overriden with the option --port-max OR -p maximum-number-of-ports
We should use this number as a limit, yes. (we will not do exotic maths to try to guess the maximum number of sinks or sources there can be)
